How to make low carb chicken wrap


Peel off and discard the skin. The easiest way is to peel from the left and right. The back bone part is a bit harder to pull, cut with knife as you go.

Cut into halves. For portioning and to help it cooks better. (One half for a serving).

Sprinkle a lot of salt on the meat and rub.

Put in a pot of boiling water or broth. Wait until it reach rolling boil, then reduce to simmer for 10 minutes. This way the breast remains tender and cooked perfectly.

Dice a clove of garlic.

To get rid of the skin. Pres the garlic with knife.

Hold the peaking part squeeze gently.

The flesh will fall off.

Dice tomatoes by cut to halves, cut horizontally (not all the way tho)

Put them in the same bowl as garlics.

Chop some parsley

Toss in

Add lime juice.

Black pepper and salt (last to put in as salt will draw out the water in tomato and make it soggy). You can add capsicum olive oil or chopped nuts, if you like.

Shred the chicken

Put in the lettuce leave.

Add the salsa.
